Home Ham Asparagus Rolls

Recipe for 4 persons

Hard boil the eggs, wash the asparagus, cut off the woody ends. Peel the kohlrabi, wash and cut into thin sticks. Blanch asparagus and kohlrabi in boiling salted water with 1 pinch of sugar for approximately 3 minutes. Drain the vegetables well, wash the rocket. Place eggs under cold running water, peel, halve, remove egg yolk, chop egg white into small pieces. Crush the egg yolks and purée with 5 Tbsp. boiling water, 4 Tbsp. olive oil and 2 Tbsp. lemon juice. Season with salt, pepper and sugar. Loosely mix asparagus, kohlrabi, rocket and egg-white. Add 2 Tbsp. olive oil, 1 Tbsp. lemon juice, salt and pepper. Spread the asparagus mixture over the ham slices and roll up the ham slices. Arrange 3 ham rolls and some dressing on each plate.

1 kohlrabi (approx. 350 g)




1 bunch rocket (approx. 60 g)

6 Tbsp. pure virgin olive oil

3 Tbsp. lemon juice
