Sandwich with Potato & Egg Salad and Home Ham

Recipe for 4 persons

Hard-boil the eggs, finely dice the gherkin. Mix a vinaigrette with gherkin juice, vinegar, sugar and the two oils. Fold in the gherkin. Clean the shallot, cut into fine rings, chop the parsley and stir both into the mixture. Season with salt and pepper. Slice potatoes and hard-boiled eggs. Butter the bread slices, place potato and egg slices on the bread and drizzle with vinaigrette. Place Home Ham on top and sprinkle with cress.


2 boiled potatoes (predominantly waxy)

Salt and pepper

2 eggs

1 gherkin

2 Tbsp. gherkin juice

2 Tbsp. herbal vinegar

1 tsp. sugar

2 Tbsp. sunflower oil

1 Tbsp. rapeseed oil

1 shallot

2 stalks parsley

4 thick slices of coarse rye bread

40 g butter

1 tray cress

4 slices Home Ham
