Wild Boar Ham, smoked

This particular ham specialty for the time before Christmas is very mildly salted with a sea salt mixture according to our raw ham method and cured carefully over 13 months and lightly smoked. This ham, sliced wafer thin becomes a fine delicacy on a crunchy baguette or an Italian grissinis.
